Super-fast speculoos mousse is the latest coronavirus invention

People who are slowly going crazy with boredom from working from home are apparently all coming up with new recipes. And apparently, beforehand they mainly stockpiled instant coffee and speculoos biscuits, next to all the toilet paper. The latest invention from coronavirus quarantine: this ridiculously easy speculoos mousse.

The coronavirus crisis has already brought us the wonderful Dalgona Coffee, a tortilla with chips and a speculoos tiramisu. Everyone is also baking up a storm with sourdough from their own kitchen and banana bread made with fruit from their own fruit bowl. Is it to find their zen? Or to get rid of all the stockpiled supplies?
In any case: speculoos mousse. All you need is whipped cream, a few biscuits and a jar of speculoos spread.
How to make speculoos mousse
- Whip the cream until it forms soft peaks.
- Heat the jar of speculoos spread in the microwave for about 20 seconds.
- Spoon 10 tablespoons of speculoos spread into the whipped cream. Carefully fold it together with a spatula until the speculoos is fully mixed into the cream.
- Crumble the biscuits. Put some crumbs in the bottom of a glass or bowl. Divide the speculoos mousse over them.
- Decorate the glasses with some whipped cream, biscuit crumbs or small biscuits. You can also drizzle some more speculoos spread over the top.
- Place the glasses in the refrigerator for two hours to set.
