The ultimate cheese fondue with Parmesan cheese

You probably never thought of it, but cheese fondue can be even more delicious: when you make it with Parmesan cheese. The Swiss might be shocked, but in Italy this delicious cheese fondue is a huge hit – and soon it will be at your kitchen table too. Add a baguette and start dipping.

When you buy Parmesan cheese, make sure you get the real cheese. Dutch supermarkets also stock fake Parmesan – simply because it’s cheaper and because the Dutch imitation melts better. Fine if you want to save money, but not OK for your cheese fondue. No: only the real Italian cheese is good enough for this.
How to make the ultimate cheese fondue with Parmesan cheese
- Heat the garlic, white wine and a little lemon juice for a few minutes in a saucepan with a thick base or a special cheese fondue pot.
- Stir in the cream, nutmeg, black pepper and the cheese rind (if you have one). Simmer for five minutes, then remove the cheese rind from the fondue.
- Then stir the grated cheese into the fondue. Thicken the fondue with the cornflour slurry. Taste and season.
- Serve with the crusty bread.
