It’s (almost) summer! And that means the terrace, garden, park and beach are calling. You probably don’t feel like spending hours in the kitchen. Good news: with these recipes, you’ll have a delicious summery meal on the table in no time.

These are five editorial favorites for a summer evening, from rillettes to spring rolls. With one thing in common: they’re on the table in no time.

1. Sardine rillettes

These rillettes from Julius Jaspers’ book Kampeerkoken are perfect as a starter. You can wake me up for sardines prepared any way, but these rillettes are truly finger-licking good.

2. Poké bowl Medina

Abdel Alaoui is, as far as I’m concerned, the king of Moroccan cuisine. In his book, he shares his poké bowl recipe. And ideally, you can prepare many of the ingredients ahead of time, so in the evening you only have to throw everything together.

3. Gazpacho

As soon as I even think about summer, I crave gazpacho. But the tomato version isn’t the only delicious one; this cucumber gazpacho is wonderfully refreshing too.

4. 5-minute salmon salad

My ultimate tip is this 5-minute salmon salad from the Saladebijbel. As the name suggests, it’s on the table in just a few minutes. Deliciously filling and the perfect base—if you’re planning to drink a bottle of wine in the park after dinner—I’m already on my way.

5. Spring rolls with prawns

Crunchy, fresh and a little spicy; delicious! These Thai spring rolls with prawns are always a success. Don’t have everything at home for the Thai version in this recipe? Don’t worry, you can fill the spring rolls with practically anything in your fridge, so feel free to experiment!
