If there’s one platform we need to turn to for the very latest food trends, it’s TikTok. We’ve been completely inundated with fantastic recipes lately. Deep-fried mozzarella balls, lasagna soup, Espresso Martini with Parmesan: how many brilliant minds are walking around this planet?! So my expectations were high for these choco yoghurt bites. And yep, they were exceeded once again. This is a summer snack to stay.

How to make frozen choco yoghurt bites

These frozen choco yoghurt bites are incredibly easy to make. Another plus: you only need 3 ingredients. What do you need to get?

  • 250 grams mixed berries (strawberries, raspberries, blueberries or a mix of everything)
  • 200 grams quark or thick yoghurt
  • 150 grams chocolate
  • Optional: a spoonful of honey and some sea salt

First, chop the berries into small pieces. This isn’t necessary for blueberries, as they’re already small enough. Then mix in the quark or yoghurt. Would you like it a little sweeter? Add a spoonful of honey. Mix everything together well. Take a large plate or a cutting board (I used a plastic cutting board) and cover it with a sheet of baking paper. Now spoon mounds of the yoghurt-and-fruit mixture onto the plate or board.

Tip: use an ice cream scoop—it makes things much easier and gives you evenly sized balls. Place the mounds in the freezer so they can slowly firm up. This takes an average of 1 to 1.5 hours. Just before taking the mounds out of the freezer, melt the chocolate au bain-marie. Dip the yoghurt bites into it until they’re completely covered in chocolate. If you like, sprinkle some sea salt over them. Place them in the freezer for another 10 to 15 minutes and voilà!

You can make them healthier by using very dark chocolate (at least 80%) and choosing unsweetened plant-based quark or yoghurt. But of course, that’s entirely up to you.

The perfect summer snack

The choco yoghurt bites are sweet, refreshing and the perfect snack for a hot summer day. Admittedly, they’re not ideal to take to the beach—they’re guaranteed to melt. But fresh from the freezer at home, they’re absolutely delicious. A sort of ice cream bonbon meets frozen yoghurt. You might as well make room in the freezer right away. YUM!
