People who cook professionally especially enjoy sharing their knowledge. They probably bite their tongues often enough not to come across as know-it-alls, and bite their hands to stop themselves from snatching the pans out of the hands of people who really have no idea what they’re doing. Luckily, they share their tips from the field online, so we can benefit from them—or use them to improve other people’s cooking.

If you don’t have professional kitchen tongs, you can also use oven mitts, spoons or knives. Just make sure you click them together at least twice before picking something up with them, to check whether they’re actually ‘on’.

Make some soapy water

Do the dishes and clean up your mess while you’re cooking. Yes: WHILE.

Go with your gut

If you’re baking something, follow the recipe. If you’re cooking, follow your heart.

Sharp

A blunt knife is much more dangerous than a sharp knife. So always keep your kitchen knives sharpened.

If your tea towel or kitchen towel is wet, you can no longer use it to pick up something hot.

A good kitchen always has a large stack of clean, dry tea towels in stock.

Soy sauce goes with many more dishes than just Asian recipes. A splash in scrambled eggs is delicious, and add a little to caramelized onions—you won’t believe the flavor.

Oil level

It’s better not to use olive oil for frying. Use a neutral oil instead, which can get much hotter without smoking.

A little acidity

My tip is to choose the acidic flavor component in a dish based on the type of dish. Making something Mexican? Lime juice is delicious. Italian? Balsamic vinegar. And if you’re making a dish with cream, add the acidic ingredient last; otherwise, the whole thing may curdle.

Bacon

Baking bacon in the oven is much easier than frying it in a pan. And it isn’t difficult either!

Pasta e basta

Want a deliciously thick, creamy pasta sauce? Add a little water from the pot of pasta.

Cinnamon

Cinnamon isn’t only delicious in sweet dishes—it can also greatly deepen the flavor of a savory dish.

Don’t be afraid

Don’t be afraid of pepper and salt. Salt in particular is underestimated: it makes all the other flavors in a dish taste deeper and better.
