These two cocktails you’ll want to make as soon as possible: Fino & Tonic and PX Spritz

We drink cocktails all year round. But when we’re lying stretched out with our feet in the sand on a sunny beach, they taste even better. And do you know what we make them with? Sherry! It’s the perfect base for cocktails, and we’re sharing two refreshing recipes.

FavorFlav’s Sharon, nickname: sherry, is mad about—guess what: sherry. She previously wrote a hymn of praise to it, after her pilgrimage to sherry region Jerez. Sharon: ‘People always look at me as if I’m speaking Chinese when I say I love sherry. But believe me: saying you don’t like sherry is actually rather like saying “I don’t like vegetables.” There are so many different styles, from saline, almost nutty and bone-dry to seductively sweet, and that versatility is precisely what makes it so worth discovering. There’s always a sherry you’ll enjoy, including in a cocktail!
Sherry in cocktails
Each type of sherry has different characteristics that pair well with particular spirits and flavors. Oloroso, for example, with its pronounced aromas of walnut and dried fruit, combines well with aged spirits and a walnut-, cinnamon- or licorice-based liqueur. Cream, on the other hand, has a distinctly sweet flavor of ripe fruit, such as figs and raisins. This sherry pairs well with woody and intense spirits, as well as toffee syrup and coffee liqueur.
The Fino & Tonic cocktail
Fino, a very dry—indeed bone-dry—sherry, pairs well with many different flavors, such as citrus fruits, cucumber, mint, basil, pineapple, coriander and elderflower. The Fino & Tonic cocktail is wonderfully refreshing and the perfect thirst-quencher on a sweltering summer day. The combination of Fino, tonic, lime, mint and ice will make you feel as if you’re in a cool oasis.
Recipe for 1 cocktail
60 ml Fino
140 ml tonic
1 lime wheel
3 mint leaves
3 ice cubes
Preparation
Make the Fino & Tonic cocktail by mixing 60 ml Fino, 140 ml tonic and 3 ice cubes in a glass. Garnish the cocktail as desired with the lime and mint leaves.
The Pedro Ximénez Spritz
PX sherry is sweeter than anything you’ve ever tasted. Like pressed dates—so sweet. That makes Pedro Ximénez the perfect natural sweetener for cocktails, with a texture that allows flavors to meld. PX works perfectly instead of rum in a Daiquiri or tequila in a Margarita, but also in combination with Aperol! Recipe for 1 cocktail
30 ml Pedro Ximénez
30 ml Aperol
100 ml Cava Brut
1 orange wheel
2 ice cubes
Preparation
Pour 30 ml Pedro Ximénez and 30 ml Aperol into a large wine glass and add 2 ice cubes. Top up with 100 ml Cava Brut, stir gently and garnish with 1 orange wheel.
