Normally, it’s best to make scrambled eggs slowly over low heat, so you don’t end up with dry, hard curds of egg. But this clever chef cooks the scrambled eggs over fairly high heat and then stirs in – brilliant, right? – cream cheese. The result: super-creamy scrambled eggs, firm enough to stay between the slices of bread when you toast them. How to make this egg and cheese sandwich
- Beat the eggs in a bowl with the cayenne pepper and plenty of salt.
- Melt some butter in the frying pan. Once the foam subsides, add the beaten eggs. Keep stirring to prevent large curds from forming. Cook the eggs for about a minute, until the scrambled eggs are dry. Remove the pan from the heat and stir in the cream cheese.
- Top two slices of bread with cheese. Divide the egg mixture between them. Place the second slice of bread on top, and that’s it.
- Heat some butter in a pan and fry the sandwiches for three minutes on each side, until golden brown and the cheese has melted.
