This new oliebollen is the hype of 2025

The 2025 oliebollen season has officially opened, and that means one thing: time for new, creative oliebollen creations! For those who love adventurous flavours, there’s good news: Wendy Knubben from the pastry stall in Rotterdam has another hit on her hands. Meet the La Brûlée bol, the latest star in a long line of successful varieties such as the Limoncello bol, Pornstar bol, Expresso bol, ‘t Advocaatje and Wendy’s hit of 2024, the Dubai oliebol.

If you thought only sandwiches could cause a real hype, you’re mistaken. People are also happy to queue for special oliebollen. Just like they are now for the new La Brûlée bol.
From London to Rotterdam: an oliebol with international flair
The La Brûlée bol is inspired by the classic French dessert and the trendy streets of London, but it landed at Nieuwe Ommoordseweg 4 in Rotterdam. Wendy Knubben, a.k.a. our Dutch oliebollen queen, spent the entire summer thinking about her latest creation, and the result is something special: an oliebol that perfectly combines tradition and innovation.
Crispy on the outside, velvety soft on the inside
With a crisp, caramelised layer on top that crackles with every bite, and a velvety-soft centre, the La Brûlée bol is a true flavour explosion. It’s Dutch tradition with a Parisian attitude and a London hype, all brought together in one delicious oliebol.
The inspiration: crème brûlée doughnuts from London
We asked Wendy about her inspiration for the La Brûlée bol. It comes straight from the streets of London, where crème brûlée doughnuts are already hugely popular. These large, airy doughnuts are filled with creamy crème brûlée and then torched as well—hence the name. Crème brûlée and doughnuts: what a genius combination!
And what could be better than turning this irresistible combination into an oliebol? Exactly, not much! Wendy upgraded the familiar oliebol with a creamy filling and crispy finish, and voilà: the La Brûlée bol was born.
Where can you get the La Brûlée bol?
You’ll find Wendy’s pastry stall at Nieuwe Ommoordseweg 4 in Rotterdam. It’s a place where tradition and innovation come together, and where every year you’re surprised by an oliebol that makes you wonder why it didn’t exist sooner.
