Crispy pear crumble with ginger

Warm fruit with a crispy crumb topping and a generous scoop of ice cream, or two, is all we need to get through the winter. What am I saying, the whole year! Easy enough to make on a weekday, but festive enough to serve to guests too.

Oppo’s salted caramel ice cream goes really well with the fruit. The ice cream has fewer calories than standard ice cream. Nice if you’re watching that, but we honestly couldn’t care less. We mainly just think it’s delicious.

How to make crispy pear crumble with ginger

Peel the pears and cut them into cubes. Slowly heat them in a pan with 20 grams of sugar and the red fruit until soft. Add 100 milliliters of water to bring the fruit to a boil. Let it simmer gently until everything is soft and the liquid has reduced to a glossy pink syrup.

While the fruit is cooking, preheat the oven to 180 degrees. To make the crumble topping, rub the flour and cold cubes of butter together with your fingertips until the mixture resembles very fine breadcrumbs. Add the oats, sugar, almonds, ginger and cinnamon and mix everything together.

Line a baking sheet with parchment paper and spread the topping over it. Bake for 10 minutes. Remove everything from the oven and mix it around a little. Return it to the oven for another 5 minutes.

Pour the warm fruit mixture into an ovenproof dish and top with the crispy crumble. Bake for 5 minutes so it can be served warm. Add two scoops of Oppo salted caramel ice cream and serve immediately.
