How to make the most delicious watermelon mojito popsicles

Who doesn’t love popsicles? And when you add alcohol to them, you really have heaven on a stick. With this recipe, you can make delicious summery watermelon mojito popsicles.

Say frozen [fill in whichever cocktail] and we’re sold. Anyone who follows us even a little won’t have missed that. We’ve already enjoyed Blue Frozen Margaritas, made Pink Vodka Slush Puppies and Frozen Watermelon Mules. And these frozen boozy beauties are more than worth trying too!

How to make watermelon mojito popsicles

Purée the watermelon, mint, coconut blossom syrup and the flesh of the lime in a blender or food processor. Pour into a measuring jug and stir in the rum.

Divide the mojito mixture between the moulds, cover and place in the freezer for 30 minutes. Add the lime zest and reserved mint leaves to the poptails, insert the sticks and place in the freezer for another 12 to 14 hours, until solid.
