Recipe: traditional cheese fondue with Appenzeller®

Swiss cheese Appenzeller®, previously praised by us as a top addition to a cheeseboard or used in delicious cheese biscuits or a cheeseburger, is one of the Big Three cheeses that make up the tastiest homemade cheese fondue for a reason. By the way, you can certainly vary things, or add four cheeses like the renowned Amsterdam cheese shop Kef does, as long as you promise one thing: that Appenzeller® must be in it!

Because in the country where they have mastered cheese fondue down to the finest detail, they naturally make excellent cheeses. Creamy, made from raw milk, with a distinctive flavor from a specific brining treatment with Sulz (a secret blend of white wine, herbs and spices), Appenzeller® is an indispensable part of the best traditional cheese fondue.

How to make the tastiest traditional cheese fondue

  • Rub the caquelon (special fondue pot) with a fresh clove of garlic.
  • Pour a layer of wine into the pot.
  • Heat the wine over low heat until it starts to bubble, but do not let it boil.
  • Add a splash of lemon juice.
  • This helps the cheese melt better and turns the mixture into a homogeneous whole.
  • Add a handful of cheese to the wine and stir it in slowly.
  • While stirring, gradually add a little wine followed by a little cheese. Do not do this too quickly.
  • Continue until all the cheese has been used.
  • If the mixture is still a little too thin, you can use a little cornstarch – dissolved in wine or kirsch – to thicken it.
  • Add some freshly ground pepper and, if desired, a pinch of nutmeg.
  • Serve the cheese fondue over a small flame/rechaud.

Serve a fresh salad and, above all, plenty of sturdy bread with the cheese fondue.
