Carnival or not, here’s the Flügel bitterbal

It’s crispy, it’s pink-purple, it comes straight from the fryer and you dip it in mustard. Riddle me this: a Flügel bitterbal. A new invention by a hospitality entrepreneur from Tilburg, and a hit on his menu.

Corona sparked the creation of this new bitterbal. ‘We were looking for new things to find energy during the coronavirus period,’ says Jeroen Rosenberg of Dutchies restaurant in Tilburg. ‘There were beer bitterballen, but no one had ever incorporated Flügel into a bitterbal.’

Creative little duck

People have been getting culinary with Flügel more often. There are already Flügel stroopwafels, bright pink fudge with that famous flavor, cake with the little duck, freak shakes and, of course, all kinds of cocktails in which it disappears, from a sangria to a gin and tonic—name it, and Flügel can go in it. Do you get all these good ideas when you empty one of those mini bottles?

And: vegetarian

The outside of the bitterbal is yellow, while the inside is bright pink. It contains not only Flügel, but also some beetroot. Bonus: it’s vegetarian. During carnival, Dutchies really plans to go all out with its new invention. ‘We’ve spoken with the makers of Flügel, who are enthusiastic and also want to do something with it. But we said: let us keep it unique for now, available only here, and then we’ll see what happens after carnival.’
