Château Neercanne launches Ruinart champagne menu

Ruinart Château Neercanne

Maison Ruinart has come up with a particularly delicious collaboration especially for TEFAF in Maastricht – since this year the official partner of the renowned art fair. And with the beautifully situated Château Neercanne in Maastricht. Until the end of March 2024, an exclusive champagne menu will be served here at L’Auberge de Neercanne, created by Chef Raymond Remmen.

Founded in 1729, making it the oldest champagne house in the world, Maison Ruinart collaborates with successful artists every year. This year’s theme was ‘Conversations with Nature’. During TEFAF, the work of Dutch artist Thijs Biersteker was unveiled. Especially for Maison Ruinart, he created his work Xylemia, inspired by vine roots winding around the tree trunk. Using sensors, he captures the sap flow in real time.

At Château Neercanne, the art is translated onto the plate – here, artistic dishes are served in the midst of nature.

From the organic vegetable garden

Raymond mainly uses local ingredients in his refined dishes, grown in the organic vegetable garden in the Jeker Valley. For example, the first shoots of the season are used in the starter of haddock and cockles, while the main course of veal loin features full green leaves from the vegetable garden.
