Americans love it: chicken & waffles. A soft, sweet waffle with crispy chicken and sticky maple syrup. The dish is becoming increasingly popular in the Netherlands too. We understand why in the editorial office.

Breakfast meets dinner
For those who can’t choose between sweet or savory, this is the ultimate dish: crunchy, soft, sticky, sweet, salty. The original version was created at Wells Supper Club in the Harlem neighborhood of New York. Jazz musicians would stop by after their nighttime performances for a midnight snack. Too late for dinner, too early for breakfast. As is often the case, the tastiest things are created by chance. The chef put together a dish using some leftover chicken from the evening and waffles from the breakfast menu and voilà: chicken & waffles was born.
Endlessly versatile
Besides the classic chicken & waffles with maple syrup, there are countless variations possible. For example, Cut Throat in Amsterdam serves a version with Louisiana hot sauce and melted cheddar, G’s adds crispy bacon and a spicy maple syrup, Altijd in de Buurt in Rotterdam serves it as a sandwich with fresh apple strips, and District A puts its own spin on it with Vietnamese spices and pandan waffles. And for anyone still in need of a hearty base: there’s even a fried chicken & waffles benedict (with a poached egg and creamy Hollandaise sauce, or ‘eggs benedict’).
