Liefdeselixer Tofu

Our former colleague Emma de Thouars has a great love for Asian cuisine, and Chinese cuisine in particular. During her travels through Asia, she fell in love with tofu, because with this silky-soft product you can put the most delicious things on the table. In her new cookbook Tofu, Emma shows you everything you can do with tofu through forty different recipes, including this love elixir that you pour over tofu (and lots of other things!).

Emma: “Everyone should have a love elixir in their repertoire – a sauce so delicious that everyone who tastes it immediately falls in love with you. This is mine. The effect is greatest when you serve the perfectly salty, rich, fresh and crunchy sauce over homemade tofu.”

How to make the love elixir

  • Finely chop the coriander (including the stems) and mint. Crush or chop the peanut crispies. I always do this by placing the side of a chef’s knife on the peanuts and giving it a whack. A mortar and pestle or chopping with a knife works too.
  • Put the dried chilli flakes in a heatproof bowl and heat the neutral oil in a saucepan. Test whether the oil is hot enough by dropping a piece of coriander into the oil. If it immediately starts to bubble, you’re ready to go.
  • Pour the hot oil over the chilli flakes so that everything starts to sizzle. As soon as the bubbling has stopped, immediately add the coriander and mint so that the oil cools down and the chilli flakes don’t continue cooking too far and turn bitter.
  • Add the soy sauce, stir in the peanut crispies and season with the Maldon salt. The sauce only gets better if you let it stand for a while. So don’t rush.
  • Spoon over homemade tofu, silken tofu or anything else you find in your fridge.
