France’s best chef is from Argentina. And if you think that’s strange, you should try eating at his restaurant Mirazur on the French Riviera. Eggs on the menu come from his own chickens; his very best laying hen is called Tina Turner. A poem by Neruda is served with the bread. And chef Colagreco grows his own oranges and lemons, because he couldn’t find the quality he was looking for anywhere else. Mirazur has three Michelin stars and is number one on the World’s 50 Best Restaurants list.

Once a saloon in Yountville, California, The French Laundry is now a legendary Michelin-starred restaurant led by chef Thomas Keller. A menu costs 310 dollars per person, but for that price you can enjoy an eight-course surprise menu, with most ingredients sourced as locally as possible. In the mood for truffles? A little caviar? Of course, but you’ll have to pay a surcharge.

Sustainable dining in the jungle

Hartwood, Tulum, Mexico

Couple Eric Werner and Mya Henry sold everything in New York and moved to Tulum, Mexico, where they built a one-hundred-percent sustainable restaurant in the jungle. A wood-fired oven, solar panels on the roof, and a menu that changes every day based on what’s available at the market. Reserving a table is quite a hassle: your best chance of getting one of the fifty spots is to queue at the restaurant in the afternoon and leave your name for that same evening, because this organic-minded couple doesn’t take reservations. Traditional Peruvian food, but modern

Astrid y Gastón, Lima, Peru

The success of restaurant chain Astrid Y Gastón all began in Peru, when law student Gastón traded in a career as a lawyer for slaving away in the kitchen. The restaurant focuses on traditional Peruvian cuisine with a modern twist. It has since become a chain of top restaurants, with locations in Madrid and Chicago, among others. Latin America’s best restaurant, without a doubt.

Dark and light in a top South African restaurant

The Test Kitchen, Cape Town, South Africa

Chef Luke Dale Roberts didn’t like school and cooked his way around the world, working in restaurant kitchens in Japan, Bali, England, and South Korea. That work experience and the dishes he tasted everywhere now appear on the plates at his restaurant The Test Kitchen. The restaurant is divided into a dark and a light section: cocktails are served in the dark section, while the light section focuses mainly on local ingredients and dishes.
