How to make the tastiest deep-fried banana fritters

After 2020 brought us The Year of Banana Bread, among many other peculiarities, we’re now more than ready for new recipes to use up those bananas (which we still let turn brown in the fruit bowl). Enter: deep-fried banana fritters!

Super simple, too, with an extra-tropical kick from the chocolate rum sauce. Yum!

How to make the deep-fried banana fritters

  • Pour a layer of oil about 3 cm deep into a deep frying pan or Dutch oven.
  • Heat to about 160° C, or until a crumb of white bread you drop in turns golden brown gently.
  • Meanwhile, mash the bananas with a fork in a large mixing bowl, but don’t mash them completely smooth.
  • Add the milk and mix.
  • In a medium-sized bowl, mix the flour, brown sugar, nutmeg, baking powder, baking soda, cinnamon and salt.
  • Add these dry ingredients to the bowl with the banana and milk mixture and stir briefly.
  • It definitely doesn’t need to be a smooth batter; the chunks are what make it delicious.
  • Drop a heaped tablespoon of batter into the hot oil each time, turn the fritters occasionally and deep-fry until beautifully golden brown.
  • Adjust the heat in between batches if necessary.
  • Using a slotted spoon, transfer the fritters to a plate lined with paper towels.
  • If desired, sprinkle with some powdered sugar and serve with the rum sauce.

How to make the rum sauce

  • Melt the chocolate pieces in the butter with the brown sugar, in a tall saucepan over medium heat.
  • Keep whisking continuously until it becomes smooth after about 2 minutes.
  • Add the rum and keep stirring until the mixture has thickened slightly after about 3 minutes of cooking (the mixture will occasionally rise during cooking; briefly remove it from the direct heat when this happens).
  • Turn off the heat and let the sauce rest for five minutes before serving it with the banana fritters.
  • Enjoy!
