I’m going to guess that you’ve never eaten rice with chocolate before. Right? Makes sense, because who would think of combining the two? Well, I wish I’d thought of it sooner. If I had, this rice chocolate mousse would have been on my table every week by now.

Yes, you read that correctly: chocolate mousse made from rice. Without feeling like you’re eating rice, but with the full, creamy taste of chocolate. It’s really possible, and it may well be the easiest recipe you’ve ever seen.

How do you make rice chocolate mousse?

You need four ingredients to make rice chocolate mousse. This article is getting better with every sentence, don’t you think? Here’s what to do with those four ingredients:

1. Melt the chocolate in a heatproof bowl in the microwave. Do this in 30-second intervals until the chocolate is completely melted.
2. Put the cooked rice, hot water and melted chocolate in a blender. Blend until you get a silky-smooth, mousse-like texture.
3. Pour the mixture into a bowl and refrigerate it for 2 hours, until it becomes somewhat firmer.
4. Finally, sprinkle some cocoa powder over your mousse.

I read an amazing tip for varying this chocolate mousse: replace the hot water with coffee and add some sea salt. If I’m honest, this sounds even better than the standard version.
