Lidl sells meatballs made from… crickets

Some time ago, supermarket Lidl issued a call: pitch us your most sustainable, healthiest or most innovative idea. The winners of this pitch then had their own product on sale at all Lidl stores in the Netherlands for a week. Together with StartLife, the incubator for agrifood startups affiliated with Wageningen University, Lidl is trying to give innovative companies a platform in this way.

It was a resounding success, with a follow-up: from tomorrow (June 30), Lidl’s shelves will once again be stocked with all kinds of special products. 

Meatballs with..

Crickets! That’s right: Lidl sells Little Hopper Cricket Meatballs from De Krekerij. Don’t be misled by the name, because alongside plant-based ingredients, the meatballs mainly contain crickets. And don’t let the word crickets put you off either, because crickets are not only sustainably farmed and nutritious, they also have a delicious nutty and salty flavor and are perfect for a wide variety of dishes. For example, make Vitoulet de Charleroi with them, but instead of veal meatballs, use these quick cricket meatballs.

You can put together a quick lunch like this in no time. Here’s what you need for 2 people:

  • One pack of Hopper Cricket Meatballs
  • 1 Turkish bread
  • iceberg lettuce (or a bag of pre-cut iceberg lettuce)
  • red cabbage
  • 2 tomatoes
  • a little shaved carrot
  • 8 tablespoons of yogurt (preferably full-fat or Greek)
  • 2 tablespoons of mayonnaise
  • a handful of flat-leaf parsley
  • a handful of fresh mint
  • 4 cloves of garlic
  • lemon juice
  • pepper and salt to taste
  • oil for frying

How to make Turkish bread with cricket meatballs

  • Start by making the garlic-mint yogurt sauce. Finely chop the garlic or put it through a press. Finely chop the parsley and mint as well, and add them to the garlic.
  • In a bowl, mix the mayonnaise with the yogurt and the garlic/mint/parsley mixture. Stir well and let it stand for ten minutes. Taste the sauce and add lemon juice, pepper and salt to taste. Then let the sauce stand for another 10 minutes.
  • Fry the Little Hopper Cricket Meatballs according to the preparation instructions on the package.
  • Cut the Turkish bread into 4 pieces and slice them open. Wash all the vegetables and cut them as desired, then fill the Turkish bread with all your vegetables.
  • Then add the meatballs to your bread and top with your homemade garlic sauce.
