Alongside the familiar silver-grey tub of spreadable butter, Lurpak is now also introducing butter in a block pack. And this is a top-quality butter for baking. That’s why we’re sharing a heavenly recipe for carrot and banana pancakes with you right away.

Beyond the uncertainty

Could these two Danish butters finally help people overcome their uncertainty in the kitchen? Because research shows*: almost half of the Dutch rate their confidence in the kitchen a six or lower. A six or lower! Young people in particular (ages 16–29) rate their cooking skills low—while you really should be able to make these 18 dishes before turning thirty.

That uncertainty can partly be explained by the fact that we—especially younger generations—regularly eat and drink out, and the desire to cook is waning, according to the FoodService Institute Nederland (FSIN)**. But Lurpak believes that uncertainty can be solved with a generous dollop of butter and some experimentation in the kitchen—and I get that: a dish simply becomes much tastier with a generous knob of butter.

Butter works wonders

Here at home, the blocks of butter disappear incredibly quickly too. Extra (salted) butter in my banana bread waffles, for making brioche, in risotto, on my butter snack board and in the pan when I fry potatoes to serve with classic asparagus: everything is improved by butter. That’s why I’m happy about Lurpak’s new butter blocks, specially designed for baking and frying. And luckily, alongside an unsalted variety, there’s also a salted version available (because fat & salt are my favourite duo—I might as well admit it).

And do you know what you can make that’s incredibly delicious with this? Carrot and banana pancakes!

How to make carrot and banana pancakes with Lurpak

  • Heat 25 g Lurpak butter in a frying pan over medium heat. Toast the walnuts in it until golden brown. When they are almost crisp, sprinkle the walnuts with the smoked paprika powder, sea salt and sugar. Drain on kitchen paper.
  • Grind the caramelised walnuts in the chopper attachment of the hand blender until crumbly; set aside 1 tbsp of crumbs in a bowl for garnish.
  • Add 150 g butter and blend for ± 1 minute until the butter is light and airy. Spoon the butter into a bowl and set aside until needed.
  • For the batter, mix the flour, baking powder, cloves, a pinch of salt, eggs and milk. Stir until there are no lumps left in the batter, then stir in the grated carrot.
  • Wipe the frying pan clean and heat one third of the remaining butter in the pan. Pour 4 mounds of batter into the pan and place 3 banana slices on each mound.
  • Cook the pancakes for 2 minutes over medium-high heat until golden brown, flip and cook for another 2 minutes. Repeat this 3 times while keeping the rest warm under aluminium foil.
  • Place 3 small pancakes on each plate. Spoon a little walnut butter on top and sprinkle some nuts over the pancakes to finish.
