NOMA finally gets third Michelin star

The acclaimed restaurant NOMA in Copenhagen is finally getting a third Michelin star. The restaurant run by chef René Redzepi won one award after another, but that third star always remained just out of reach. But in the new edition of the Michelin Guide for Scandinavia, it is finally there.

NOMA opened in 2003 and quickly became the figurehead of the new Nordic cuisine, a culinary movement that experiments creatively with local ingredients. Not only local meat and fish, but also less obvious ingredients make it onto the plate: moss, tree bark and unusual berries. If you feel like dining at NOMA, you have to book well in advance and save up, because fifteen courses cost 265 euros.

Takeaway only

Corona also hit NOMA hard. The restaurant was closed for a while, and reopened in May with a surprising menu: burgers and wine, takeaway only, no reservation required. Well, you have to do something. The restaurant is now open as usual again. Redzepi celebrated the reopening with a grand dinner for corona heroes, and everyone in Denmark could nominate their corona hero for a place at the table.

Fourteen years of waiting

The Scandinavian Michelin stars were handed out during a festive television show. When René Redzepi heard that he had received three stars, he stared at the camera in astonishment, wine glass still in his hand. ‘I’m stunned,’ he said. ‘Honestly, I’m completely surprised. I’ve never felt this before; I don’t know what to say now. We’ve waited fourteen years for this, and at some point you start to think it’s never going to happen.’ The jury praised the restaurant: ‘NOMA has a strong connection with nature. Unusual ingredients are incorporated into creative, complex dishes.’

Oslo too

NOMA was not the only restaurant to win an award; Maaemo in Oslo also received a third star. This restaurant was also awarded a special green Michelin star because of its particularly sustainable practices.
