BBQStreet; perhaps you’ve seen the program on 24Kitchen. Tough men, cooking tough and presenting tough. A little too much toughness if you ask me, because women can certainly grill a piece of meat too. Still, we didn’t want to keep this recipe for pork belly from the new BBQStreet basic cookbook from you, because it really is irresistibly delicious.

The pork belly burnt ends are a very popular low & slow BBQ dish, the so-called ‘Meat Candy‘. It tastes truly fantastic and isn’t that difficult to make.

How to make pork belly with apple BBQ sauce

  • Soak the apple wood chunks in lukewarm water for 10–30 minutes. Prepare the BBQ for indirect grilling and heat it to 130 °C. For the apple BBQ sauce, bring all the ingredients to a boil in a saucepan and let them gently reduce. Lightly brush the pork belly with olive oil.
  • Mix all the ingredients for the Pork Rub and rub it into the meat. Place the apple wood chunks on the glowing coals or in the smoker box. Place the seasoned pork belly cubes on the grate over indirect heat. Smoke them for approximately 2.5 hours, until the cubes are nicely reddish brown. Put the smoked pork belly cubes together with the apple BBQ sauce in the metal roasting pan and add the beer.
  • Cover with aluminium foil and continue cooking on the BBQ for another 1.5 hours with the lid closed.
  • Remove the cubes from the sauce, place them on the BBQ grate and smoke them for 15–30 minutes, until the sauce has nicely thickened/caramelised around the meat.
  • Briefly toast the sesame seeds in the frying pan or skillet with a low rim.
  • Serve the pork belly burnt ends with the apple BBQ sauce and sprinkle with some toasted sesame seeds.
