Recipe: how to make stamppot sushi

What the farmer doesn’t know, he won’t eat. So those rolls with rice and seaweed, that so-called soo-shee of yours? No way, put it away again, he’s not having any of that. But what if you made sushi with an old-fashioned stamppot inside? Even the most die-hard potato eaters couldn’t say no to that.

A crazy idea from Lidl, we have to admit. The nori sheets are filled with a delicious creamy kale stamppot, and served with a dip of old-fashioned gravy. Creative types can start experimenting: why not hutspot? Or a mash of raw endive? Let your imagination run wild and roll up all those delicious Dutch stamppots.
How to make stamppot sushi
- Cut the potatoes into cubes, cover them with cold water and bring to a boil. Add the chopped kale and cook for 20 to 25 minutes until tender.
- Drain, then mash with pepper, salt and a knob of butter to make a delicious purée.
- Heat the smoked sausage according to the instructions on the package and cut it into long strips. Cut the pickles into long strips as well.
- Place a sheet of nori on the bamboo mat, spread the stamppot over it and place the pickle and smoked sausage in the middle. Roll it up neatly and tightly, sealing the ends with a little water.
- Cut into attractive pieces and dip the stamppot sushi—in chopsticks—into the bowl of gravy.
