Recipe by Job & Perry: Flemish-Style Asparagus Frikandel Pastries

Job & Perry, the chefs and TV cooks you probably know from 24Kitchen, have published an amazing ‘asshole-proof’ cookbook. We’re already fans of their best grilled cheese sandwich of all time (yes, it really is), but this frikandel pastry is also absolutely fantastic.

Job & Perry: “We make this snack exactly the same way as a frikandel pastry, but with beautiful white asparagus inside instead of a deep-fried meat stick. It contains all the flavors of asparagus à la flamande, only in a deliciously rich, crispy crust! If you have extra time and the skills, you can also make some extra hollandaise sauce to go with it. But believe us, it’s already a winner just like this.”

How to make Flemish-Style Asparagus Frikandel Pastries

  1. Cut off the tough ends of the asparagus and peel them all around with a vegetable peeler. Let the peeler do the work and don’t apply too much pressure.
  2. Bring 2 liters of water with the salt to a boil. It may sound intense, but asparagus is cooked in very salty water: 9 grams of salt per liter. So for 2 liters of water, use 18 grams of salt. Cook the asparagus for about 10 minutes, until tender but still firm. Remove the asparagus from the cooking liquid and let it steam-dry on the clean tea towel.
  3. Meanwhile, hard-boil 6 eggs in another pan of boiling water for 8–10 minutes. Drain, cool briefly under cold running water, peel and mash them. Mix with the parsley, horseradish, nutmeg, salt and pepper. Set aside.
  4. Preheat the oven to 215 °C.
  5. Now we’re going to make the pastries. Cut the puff pastry into 4 rectangular sheets of approximately 25 by 20 centimeters. Place one sheet of pastry in front of you and cut the left half of the pastry crosswise every centimeter.
  6. Spread some of the parsley-and-egg mixture over the right side of the pastry, followed by 2 asparagus spears wrapped in a slice of ham. Fold the pastry over the filling and press the edges together with a fork. Brush the pastry with a little egg yolk and make three more pastries.
  7. Bake the pastries in the center of the oven for about 12 minutes, until golden brown and cooked through. And don’t forget: blow first, then take a bite.
