Recipe: garlic knots, super-quick garlic bread rolls

Garlic knots are a staple on the menu at pizzerias in America. In the kitchen, they make the rolls from leftover pizza dough, and there’s usually some herb butter left in the fridge too. You can make the dough yourself; it’s not complicated at all, but it takes more time because the dough has to rise. In a hurry? Ready-made pizza dough works just as well.
Making the dough
If you’re making the dough yourself, you’ll also need these ingredients:
- 300 grams flour
- 1 teaspoon sugar
- 10 grams dried yeast (or 20 grams fresh yeast)
- 2 teaspoons salt
- (optional: 1 tablespoon semolina)
Making the dough: dissolve the sugar in a cup of lukewarm water. Add the dried yeast and let it stand for a while, until it starts to foam. Mix the salt and flour together. Make a well in the flour and pour in the yeast mixture. Knead together, adding lukewarm water until you have a soft, supple dough. Knead it for about ten minutes (or let the food processor do the work). Shape it into a ball, place it in a greased bowl and leave it covered in a warm place for two hours, until the ball of dough has doubled in size.
Garlic butter
In the meantime, make the garlic butter: let the butter soften. Chop the garlic as finely as possible. Finely chop the parsley. Stir the garlic, parsley and salt into the softened butter and set aside for a while.
Rolling, knotting, baking
Prepare a baking sheet lined with parchment paper. Sprinkle it with some semolina if desired – this gives the bottom of the roll a crispy crust.
Punch down the dough and roll it out. Divide it into about twelve elongated pieces. Using ready-made dough? Same process: roll it out and divide it into twelve elongated pieces.
Roll out the pieces of dough a little with your hands. Then tie each piece of dough into a knot.
Place the knots on the baking sheet. Cover and let them rest for half an hour. Meanwhile, preheat the oven to 200 degrees.
Bake the knots for about 20 minutes, until golden brown and cooked through. Brush them with the garlic butter as soon as they come out of the oven. Eat immediately! Want to eat them later? Then wait before brushing the rolls with butter.
