Recipe: Gochujang Chicken Noodle Soup

If, like me, you’re caught up in TikTok’s food algorithm, you’ve probably seen a dish made with gochujang. This is Korean red chili paste, available at Asian supermarkets (or online), and it’s goddamn delicious. Many people use it as an extra addition to, for example, instant noodles (especially those Creamy Carbonara ones), but I think this recipe for Gochujang Chicken Noodle Soup is much tastier.

It may take a little more work, but it’s worth it: this recipe for chicken noodle soup with gochujang is so much better than any kind of instant noodles.
How to make Gochujang Chicken Noodle Soup
1. Cut the onion into small pieces, the zucchini into half-moons, the spring onion lengthwise (and finely chop the green part for garnish at the end), and the shiitake into pieces.
2. Put the oil in a deep pan (or sauté pan) and add the chicken thighs; pat them dry with a paper towel first. Sprinkle the salt over the chicken and cook in the pan over medium heat for about eight minutes. Then turn the chicken over and cook for another five minutes or so. Remove the chicken from the pan, first checking carefully that it’s cooked through, and set aside.
3. Add the gochujang to the pan, stir briefly, and add one cup of chicken stock. Stir well, then add all the vegetables and the remaining chicken stock.
4. Add the chicken and let everything simmer over low heat for about fifteen to seventeen minutes — until the chicken and vegetables are cooked.
5. Remove the chicken and pull it apart. Discard the bones. Meanwhile, cook the noodles until tender in a separate pan.
6. Return the chicken to the pan, add the fish sauce, and add the noodles a little later.
7. Ready to serve! Pour your Gochujang Chicken Noodle Soup into deep bowls and garnish with some finely chopped spring onion.
Trust me, this is so delicious. It’s filling, ultimate comfort food and also very easy and quick to prepare. And there’s a good chance you’ll become just as addicted to gochujang, because I now use it in almost every dish.
