Recipe: green asparagus with cheese from the oven

Eating at home all these days; whether you’re having something delicious delivered or prefer to cook in the kitchen yourself – we’re getting pretty creative, aren’t we? Here’s another side dish with a serious indulgence factor: green asparagus with wonderfully melted cheese.

You already knew that we love putting Gruyère in all kinds of dishes, from madeleines to toasties. And it’s also a great choice for these asparagus parcels. But any cheese that melts well is delicious with them; Fontina or Manchego would also work really well here!
How to make the asparagus parcels with melted cheese
- In a large bowl, toss the asparagus, olive oil, garlic and oregano with the lemon juice.
- Season with salt and chilli flakes.
- Tear off four pieces of aluminium foil, approximately 30 cm long.
- Divide the asparagus between the pieces of foil and sprinkle the melting cheese over them.
- Fold the pieces of foil closed (fold the edges upwards to seal them) and place them on a baking sheet in the oven.
- Heat for more than 15 minutes, then check one parcel to see whether the cheese has melted properly and is deliciously stringy.
- When they’re ready, you can sprinkle over some extra chilli flakes and, if desired, grated Parmesan. The more cheese, the better, right?
