Recipe: How to make delicious pineapple skewers on the barbecue

Fire up the barbecue and surprise your family and friends, vegans and die-hard meat eaters alike, with the most fantastic plant-based dishes for and alongside the barbecue. In Vegan Summer, Milou van der Will leaves the standard shashlik and grilled corn on the cob behind and shows you how to make delicious main and side dishes, such as these pineapple skewers with Thai dressing, which will give your vegan BBQ an upgrade this summer.

Milou: “Of course, you can grill pineapple and eat it for dessert, with a scoop of ice cream or whatever. But that would be a shame with this jaunty Thai dressing, which is guaranteed to give the sweet pineapple an even more explosive look with that smoky touch.”
How to make pineapple skewers with Thai dressing
- Crush the rawits finely in a mortar. Add the garlic and gula jawa and grind into a paste.

- Add the red onion to the dressing.
- Thread the pineapple onto the skewers.
- Grill the skewers on the barbecue grate. Not for too long, but until they are just nicely browned.
- Serve the pineapple on skewers with the Thai dressing.
