Recipe: how to make incredibly simple (and heavenly delicious) pistachio ice cream at home

We were completely over the moon when it turned out that the delicious pistachio ice cream from Italy is now also simply available in Dutch supermarkets. If your freezer is (also) completely full of those pistachio ice creams on a stick, you’ll have to make some extra room after all. For your homemade, super-simple, yet oh-so-delicious pistachio ice cream.

Making ice cream yourself is really peanuts. Or pistachenuts, perhaps we should say in this case. You don’t need any complicated machines or expensive ice-cream makers. A blender will do.

Do you need to stock up on lots of ingredients, then? Or things that are impossible to find? No way! For this recipe, you only need 200 grams of Greek yogurt, 30 grams of pistachios and 15 grams (or one tablespoon) of honey. You need to shell the pistachios and soak them. Let me warn you in advance: you need to set aside a few hours for soaking them. If you soak the nuts in warm water, they’ll be soft in about 2 to 3 hours. So plan your time well, especially considering that the ice cream will also need some time to harden in the freezer later.

Have the pistachios been soaked? Then put them in your blender together with the yogurt and honey and blend everything together. Pour the ice cream into a ceramic dish, cover with foil and place it in the freezer. Let it freeze for 3 to 4 hours. If you’re a true pistachio lover, top your bowl of ice cream with chopped pistachios, of course. Because is there such a thing as enough pistachio? I don’t think so. And for freshness: a sprig of mint.

I said it already: an incredibly easy recipe. And not all that unhealthy either, so you can shamelessly fill your freezer with it (as if you should be ashamed of a freezer full of ice cream).

Never enough pistachios

Since a person can never eat enough pistachios, you might as well make this insanely delicious pistachio pesto too. Great on a sandwich, but I’m just as happy to mix it through a big plate of pasta.
