How to make incredibly delicious pistachio pesto

Whether you want to cook something quickly for yourself or unexpectedly have guests over for dinner, pesto is the perfect solution. The hit of 2024: pistachio pesto. A flavor bomb that livens up many a dish and is super easy to make. The orange in this recipe gives the pesto a delicious summery twist.

I absolutely love pistachios. By the way, did you know that you can shell pistachios much faster than you do now? That’s very handy to know when you’re going to make this delicious pistachio pesto. Of course, you can also buy a bag of shelled pistachios.

Pistachio pesto is delicious with everything. Naturally: on a sandwich with mozzarella, on a piece of grilled meat (lamb works especially well), in a cream sauce with chicken breast. Or adapt your standard dressing and make a salad with salmon or a caprese salad with burrata, grilled peach and tomatoes. Use the pistachio pesto as the dressing, and serve it with warm focaccia.

How to make pistachio pesto

  • Briefly roast the pistachios in a pan.
  • Add the basil, garlic, warm pistachios, Pecorino, the zest of the lemon and orange to the food processor and blend until it forms a smooth mixture. If you’re using an immersion blender, put the ingredients in a tall measuring cup.
  • Add the olive oil one tablespoon at a time until it reaches the right consistency. Prefer it a little more fluid? Then add more! 
  • Season with a pinch of salt, ground black pepper and chili flakes to taste. Fancy more heat? Optionally add some chili oil! Prefer it a little fresher? Then add some lemon oil. Cooking is about freestyling.

You can easily keep the pesto in the refrigerator for a week. Another handy tip: pour the pistachio pesto into a (large) ice cube tray and keep it in the freezer for up to 2 months. How easy is it to always have ready-made cubes of pistachio pesto at home? So you can very easily make a whole batch at once!
