This Jamaican chicken is packed with Caribbean flavors! The chicken only gets better the longer it marinates, so take your time if you can. The jerk spices are a fantastic flavor booster that work well not only with chicken, but also with fish, grilled vegetables and potatoes.

Jerk chicken is a popular Jamaican chicken dish. The chicken is marinated in a mixture of spices, including Scotch bonnet peppers, allspice, thyme, garlic and ginger. The chicken is then grilled (as in this recipe) or smoked over allspice wood. The marinade gives the chicken a spicy, smoky and slightly sweet flavor.

How to make jerk chicken

  • In a large bowl, mix the onion, spring onions, Madame Jeanette pepper, garlic, jerk spices, salt, soy sauce and sunflower oil.
  • Add the drumsticks and, preferably wearing latex gloves, massage the marinade thoroughly all over the chicken.
  • Cover with cling film and marinate in the refrigerator for at least 10 hours.
  • Preheat the oven to 220 °C.
  • Spread the marinated drumsticks and the marinade in a large oven dish and grill the chicken in the center of the oven for 35–40 minutes until golden brown and cooked through.
  • Serve warm. Delicious with a green salad.
