Recipe: Salmon with Chili-Garlic-Lemon Oil from the Smoking Plank

Dan: “Preparing salmon on a soaked cedarwood smoking plank is easy and always works. Of course, you can buy chili-garlic oil, but ready-made oil rarely comes close to the fantastic flavor of homemade oil. The flavor of the lemon and garlic in the chili oil pairs perfectly with the salmon.”

How to make salmon with chili-garlic-lemon oil

  • Soak the cedarwood smoking plank in water for at least 30 minutes. In the meantime, make the chili­garlic­lemon oil. Add all the ingredients for the oil to a pan and gently bring to a boil over medium heat. It is important that the oil stays around 110 °C and does not rise above 120 °C. Use a thermometer and keep a close eye on the oil so the ingredients do not burn.
  • Let it cook gently for 15 minutes, then allow it to cool slightly. Pour into a clean glass jar and store in a cool, dry place at room temperature.
  • Prepare the barbecue for cooking over indirect heat. Close the lid and heat the barbecue to 150 °C.
  • Place the soaked cedarwood smoking plank on the cooler side of the barbecue, close the lid and leave it for 2 minutes.
  • Sprinkle the salmon with the all-purpose rub and place the lemon slices on top. Put the salmon on the plank, close the barbecue lid and cook for 15 minutes. This keeps the salmon rosy in the center. Smoke the salmon a little longer if you prefer it more well done.
  • Garnish with the cilantro and some chili­garlic­lemon oil, including some of the garlic­lemon mixture from the bottom of the jar.
