Recipe: the tastiest cheese sauce for fries (or for anything, really!)

It’s actually a wonder that cheese sauce isn’t eaten with fries much more often in the Netherlands. Our cheese is world-famous, and most Dutch people absolutely love fries; 1+1 = a match made in heaven, right? With this recipe for the tastiest cheese sauce, we’re getting things started!

Homemade cheese sauce with a more complex flavor profile than you might expect; now that’s something you can show up with. This recipe was shared by the famous American Shake Shack-chain, and we know what will be on the home-fries rotation from now on!

How to make the tastiest cheese sauce for cheesy fries

  • Heat the oil in a saucepan over medium-low heat and add the onion, jalapeño, peppercorns and salt.
  • Sauté the onions for a few minutes until translucent, then add the wine and vinegar.
  • Reduce briefly, then pour in the cream.
  • Stir and turn off the heat.
  • Let this infuse for 30 minutes (off the heat).
  • Send someone out to get fries and support your local fry shop in the process.
  • Pour the wine-and-cream mixture through a sieve into a bowl.
  • Pour the cream back into the pan and bring to a boil over medium-high heat.
  • Gradually add the cheeses as soon as the cream starts to boil, and whisk vigorously until all the cheese has melted and no lumps remain.
  • Tadaaa, done!
  • Pile a generous portion of fries onto your plate and smother them with cheese sauce.
