Sergio Herman launches two spectacular new fries: ‘Classic Spiced Indonesian Stew’ and ‘My Umami’

Sergio Herman’s Frites Atelier unfortunately isn’t near me (or maybe that’s actually a good thing..) but I’m more than happy to drive across the country for his new fries. Because these two new flavors sound simply irresistible, don’t they?!

I’ve been a fan of Frites Atelier Amsterdam’s crispy fries from the very beginning. Call me a snob, but when top chefs go all out on fries, I want to taste them right away. I love fries anyway, as well as loaded fries (the trend of 2021), so bring it on, Sergio!
Classic Spiced Indonesian Stew fries
Inspired by his travels (have you seen the brilliant program ‘Van de kaart’?) and experiences in different cuisines, he created two Frites Specials with completely different flavors: ‘Classic Spiced Indonesian Stew’ and the vegetarian ‘My Umami’.

The Classic Spiced Indonesian Stew, or Rendang special, brings together all the flavors of Indonesian cuisine. From homemade sambal to sweet-and-sour pickled ‘vegetables’ (as Sergio always charmingly calls them) and the earthy flavors of ginger, chili and coconut milk. Aromatic kaffir lime adds a fresh accent to this traditional Indonesian stew.

My Umami fries
A delicious autumn/winter fry with deep umami flavors from black olive powder, well-aged Ricotta, mushroom tapenade and irresistible homemade truffle mayonnaise. Finely chopped chives and grated lemon zest complete this special.
