We love it: loaded fries are the trend of 2021

We recently wrote about the brilliant Mexican loaded fries, and we’re still lyrical about the rendang fries. In fact, I sometimes make extra rendang so I can eat it on fries the next day. Because fries with a topping: nothing but love!

It’s actually strange that loaded fries didn’t break through on a massive scale much earlier, because we’ve been loving them for years and no combination is too crazy for us. We regularly eat the loaded fries with pulled pork and cheesy beer sauce from BBQ guru Jord Althuizen, for example, and poutine has also been a fries with benefits here in the editorial office for years.
Increasingly luxurious
Loaded fries—fries with a combination of surprising ingredients—are becoming increasingly popular in the snack world. Sure, we can order a kapsalon almost anywhere, yes, even abroad!, but we’re going to see loaded fries much more often at snack bars. And the selection goes far beyond fries with pulled pork. Fries with salmon flakes, chocolate, ice cream, seaweed, lime mayonnaise, caviar, chimichurri—we’re going to see it all, according to the hospitality trade magazine Misset Horeca. And notably, the toppings are becoming more luxurious too.
Black winter truffle
Burger specialist Ter Marsch & Co showed at the last Horecava how to create such incredible loaded fries—and consequently took home the much-coveted Lekkerste Frietje 2020 trophy. Chef Mitch Kramer created the winning fries, ‘Sweet Fries of Mine’, from sweet potato fries combined with black winter truffle mayonnaise, Parmesan cheese, cheese-and-peanut crumble, dried Dutch sausage and fried parsley.

Michelin-star loaded fries
Truffle is definitely a winner; research has shown that Frietje Truffelmayo is the fries of the future. Michelin-starred chef Sergio Herman also got to work with this luxurious delicacy for the creation of his new fries, ‘We Go French’: fries with homemade truffle mayonnaise (made with black truffle from the French Périgord region), shallot, mustard leaves and freshly roasted hazelnuts. I don’t know about you, but as soon as the hospitality industry opens again, you’ll find me at the nearest Frites Atelier!

Aside from these vegetarian fries, we’re going to see more and more vegetarian and vegan toppings, such as vegan chicken pieces, vegan cheese products and plant-based mayonnaises. And speaking of cheese, loaded cheese fries—in other words, fries with cheese sauce—are also becoming increasingly popular. Think loaded fries with cheese and chili sauce, with bacon and spring onion, or with guacamole. Cheese simply pairs very well with a wide range of flavors and ingredients, so this is a real no-brainer.
