So delicious: the new sandwich concept ‘PAINDEMIE’

Oh damn, of course, another hospitality closure. But the hospitality industry wouldn’t be the hospitality industry if it didn’t, resilient as ever, come up with new, inventive and super-delicious initiatives. Like: PAINDEMIE. A delicious sandwich concept—with a brilliant (and doubly fitting!) name.

PAINDEMIE sprang from the creative minds behind The Breda Group: hospitality trio Guillaume, Johanneke and Freek from Breda. You undoubtedly know them from the Amsterdam hospitality venues Maris Piper, GUTS and BREDA. What can you expect? Delicious greasy burgers, hotdogs, fries, homemade sauces—everything you could want!
Toasted in a sandwich press
The French bread known as pain de mie is used as the foundation for PAINDEMIE’s sandwiches. Chef Guillaume: ‘We had been working on a sandwich concept for some time. After a lot of thinking and testing, we managed to recreate the French toast bread I remember from my childhood together with our team and Bakkerij Kaandorp.’ The Paindemie Burger is toasted in a sandwich press into a ‘toastie burger’, like the ‘patty melt’ popular in America, and the patty (the meat) is fried in beef dripping. In addition, all the toppings are homemade, from pickles to mustard and ketchup.
The G.O.A.T Burger
Entirely in line with ‘Goatober’—an initiative designed to show that goat meat is delicious, ethical and sustainable—the G.O.A.T. Burger was developed, made from, yes indeed: goat meat. The aim is to make goat meat mainstream, so that goats born into the dairy industry end up in the food system instead of being wasted. Male goat offspring obviously do not produce milk and therefore pose a dilemma for dairy farmers. The burgers for the G.O.A.T. Burger are made with Dutch goat meat. ‘It’s delicious, but not widely eaten in the Netherlands. By choosing this meat, we’re helping to combat food waste and making goat meat more popular,’ says Guillaume.

PAINDEMIE at home
For now, PAINDEMIE’s sandwiches for home delivery can only be ordered via Deliveroo, from Maris Piper in De Pijp. Pickup at the restaurant is also possible. Soon they will also be available from Restaurant BREDA and Restaurant GUTS.
