Wraps are ideal for lunch. But let’s be honest: it’s mainly the filling that makes a wrap delicious. Otherwise, it’s pretty tough, dry stuff, right? The viral potato wrap is so delicious on its own that it hardly needs any filling. And it’s fun to make, too. It’s no wonder you’re seeing it everywhere on TikTok! We’ll tell you how to make it.

Okay, you do have to put in a little more effort than when you choose a regular wrap. Like wraps with cheese and ground beef, vegan shawarma or—yes, really—frikandel. So it’s not a matter of opening a package, heating it up and filling it. But believe me, it’s absolutely worth the effort.

How to make crunchy potato wraps

Because the potato wrap is crunchy and cheesy at the same time, and those are two qualities we’d want in every meal. The crunch comes from finishing the wrap in the oven. But we’re getting ahead of ourselves. The first thing you need to do is slice the potato very thinly. Here’s how to make the potato wrap step by step:

  • Preheat the convection oven to 200 degrees.
  • Peel the potato. Then slice the potatoes into extremely thin slices. This is easiest with a mandoline.
  • Want your wrap to be extra crispy? Place the potato slices in cold water for 15 minutes. The starch will come off, creating an extra-good crunch later.
  • Take a baking sheet and cover it with parchment paper. Arrange the potato slices in the shape and size of a slice of bread—in other words, a rectangle. Remember that you’ll fold the wrap in half later, so it needs to be large enough. Make sure the potato slices overlap slightly. That way, they’ll form one whole piece.
  • Drizzle the potato slices with some olive oil, pepper and salt. A pastry brush will help you spread the olive oil over the slices more evenly.
  • Sprinkle the potato slices with grated cheese. The cheese will gratin in the oven. This will also ensure that the potato slices stick together later. A kind of glue, basically.
  • Bake the cheese-and-potato slices for about 20 minutes in a preheated oven at 180 degrees. Not golden brown and crispy enough after baking? Bake them a little longer, possibly at 200 degrees for the final 5 minutes. Remove the potato wraps from the oven when they’re ready.

Delicious with pesto

Turn the potato wraps over and spread them with a spread of your choice. Pesto is delicious, but cream cheese works too. Then fill one side of the potato wrap with whatever you like. Extra slices of cheese, perhaps? Mortadella? Arugula? Cucumber and tomato? You do you. Then fold the wrap closed. Can you hear that crunch? That’s what we mean. If we could eat this for lunch every day, you wouldn’t hear another peep from us.
