Unique Earthday dinner: De Nieuwe Winkel, Bolenius and Triptyque are cooking together—and you can be there

On Earthday, April 22, 2024, the three best vegetable restaurants of the past 15 years are joining forces. De Nieuwe Winkel (Emile van der Staak & Louise Zegelink), Bolenius (Luc Kusters) and Triptyque (Niven and Virginie van Bronckhorst-Kunz) are heading into the kitchen together for a special dinner.

De Nieuwe Winkel** in Nijmegen has been voted Best Plant-Based Restaurant in the World multiple times (in 2022 and 2023). And Bolenius (with its own vegetable garden in the heart of Amsterdam’s Zuidas) and Triptyque are fantastic restaurants too—or, as we like to say, heaven on earth for anyone who loves delicious vegetable dishes. These restaurants have not been awarded a Green Michelin Star for nothing.

Dutch Cuisine

We sometimes joke about how boring Dutch lunches are, but we are also completely serious when we say that Dutch food culture is characterized by creativity, originality (just look at that lunch ;)) and diversity. As pioneers of sustainable gastronomy, Emile, Luc and Niven are happy to show—on the plate—how they envision the gastronomy of the future. Sustainable, local products take center stage, specifically plants, herbs and vegetables. The chefs cook according to the principles of Dutch Cuisine, with vegetables in the spotlight.

Location and cost of the Earthday dinner

Especially for Earthday, first celebrated on April 22, 1970, top chefs Niven, Luc and Emile will show and let guests taste on Earthday (April 22, 2024) how wonderful botanical cuisine tastes and how important it is to treat our planet sustainably. The special six-course dinner costs 250 euros per person. This includes an aperitif, table water, drink pairings & coffee/tea. Location: Restaurant Bolenius, George Gershwinlaan 30, Amsterdam. Guests are received at 6:30 p.m., and dinner starts at 7:00 p.m. Reservations can be made from March 23 at 8:00 p.m. via the Bolenius website.

NB: the dishes above are from Triptyque (left) and Bolenius and indicate what you can expect. The final dishes are a surprise.
