A kapsalon with spring rolls underneath instead of fries. Say what? As if you were swapping Feyenoord striker Gimenez for Lee Towers or something—just completely crazy. But! At Science Döner in Amsterdam’s Science Park, they actually do it. It’s called the Fredsalon. I never found out who Fred is, but the Fredsalon is a delicious Amsterdam variation on the kapsalon. It’s a combination that had never crossed my mind during my snack career either, so it’s understandable that you need a moment to recover. Just sit down for a bit; it’s all right. The Fredsalon is genuinely brilliant, though. It’s not even that bad that the little spring rolls aren’t super crispy, because the old-fashioned spring-roll flavor combined with sambal, garlic, lettuce and döner is a stroke of genius. Thanks to Science Döner, spring rolls will never be the same for me again. What a winner. ⭐️⭐️⭐️⭐️½
