With this trick, you’ll make the most delicious fish on the grill or BBQ

Yippee, summer; come on in! Ready for the grill, go! And what’s going on that BBQ? In our case, along with plenty of vegetables, we’d also love some fish. But if you’re still getting the hang of it, or don’t have a fish basket and don’t fancy picking bits of burnt fish out from between the grill grates; read on.

Salmon in particular does very well on the BBQ or grill. The firm, fatty texture of fresh salmon stands up well to that delicious smoky flavor, and with a fresh salad to complement it, you’ll finish it off perfectly. And this is the trick to stop that salmon from falling apart when you grill it:

Anyone can do this

Call it entry-level grilling, but grilling in a packet of aluminum foil makes it virtually impossible to go wrong. The great thing is that the salmon won’t dry out inside, but you do want to leave the top of the packet open so some steam can escape, allowing the remaining moisture to reduce slightly into a gravy. And it’s incredibly easy.

Salmon fillets with the skin on are generally cheaper, and if you don’t want to eat the skin, it’s best to remove it after grilling. But if the skin is deliciously crispy, it’s absolutely not to be missed! Here’s how to do it:

Spread it on

Make sure you have a bowl with some butter at room temperature. Grate a clove of garlic over it, add a pinch of salt and, if you have them, some chopped fresh herbs or spices you like (we love dukkah!). Mix with a fork. Place the salmon fillets skin-side down on a piece of aluminum foil large enough to fold closed over the top. Spread the butter over the top of the fish, fold the packet closed but leave an opening at the top.

Easy does it

Place the packets on a hot barbecue for about 20 minutes, and remember that they’ll continue cooking a little in the foil after you take them off the heat. The butter creates a delicious sauce at the bottom of the packet; make sure you don’t throw it away, but drizzle it over the fish, or over any vegetables you may have grilled alongside it.

This is incredibly easy, and you can bet it’ll impress!
