World’s best vegetable chef Emile van der Staak cooks at ARTIS

Emile van der Staak, Michelin-starred chef of De Nieuwe Winkel** – the world’s best vegetable restaurant! – is coming to cook at ARTIS for three days. And he isn’t doing it alone. Together with Freddy Tratlehner, known from De Jeugd van Tegenwoordig and De Nieuwe Keuken, he will serve a fully plant-based four-course menu at ARTIS. The theme: ‘The reinvention of our food’.

The three special dinners are part of the Aardbewoners Festival, which takes place at ARTIS from 15 to 23 June with an extensive programme.
The reinvention of our food
Unconsciously, we make around 200 food choices a day, each of which has an impact on the planet. Throughout history, we have reinvented our diet several times. Do we need to do so again now? During the dinner, Emile and Freddy will show, through four innovative plant-based courses – and with surprising non-alcoholic drinks – that reinvention promises a flavoursome future.
The chefs found inspiration, among other things, in everything that grows and flourishes at ARTIS. ARTIS is home to thousands of edible plant, tree and fungi species. The chefs use flavour-makers ranging from the largest to the very smallest, and reinvent classics with a playful twist.
Location, price and tickets for the ARTIS dinner
The special dinners with Emile and Freddy will take place on 18, 19 and 20 June 2024. Each course, including a non-alcoholic drinks pairing, focuses on a new way of looking at our food. Location: Artisplein. Time: 7:00 p.m. to 9:30 p.m., doors open from 6:30 p.m. Price: €150. You can order tickets here.
