These matcha blondies make your day just a little bit better with every bite.
How to make matcha blondies
- Preheat the fan oven to 175 °C. Beat the granulated sugar, brown sugar, eggs and vanilla extract for 5 to 8 minutes until light and fluffy. The time depends on whether you use a whisk or a mixer. In a separate bowl, combine the flour with the matcha and salt.
- Slowly add the dry ingredients to the wet mixture and mix until you have a batter.
- Melt the butter and 100 grams of the white chocolate in a microwave-safe bowl in the microwave for 1 to 2 minutes. Stir a few times in between. You can also melt the butter and chocolate au bain-marie; place them in a heatproof bowl set over a pan with a layer of boiling water on the stove. Make sure the bowl does not touch the water. Melt the butter and chocolate gently, stirring as you go.
- Mix the melted mixture thoroughly into the batter. Chop the remaining white chocolate into small pieces. This is not necessary if you use chocolate chips.
- Crumple a piece of parchment paper and wet it under the tap. (The water protects the parchment paper from burning at high temperatures or during prolonged baking.) Line the bottom and sides of a baking dish measuring approximately 35 x 25 cm with the parchment paper. Pour the batter into the baking dish. Place the baking dish in the oven. After 30 minutes, sprinkle the chopped white chocolate over the matcha blondies so that the chocolate or chips can melt over them. Then bake the matcha blondies in the oven for another 15 minutes. Let the matcha blondies cool for a little while, then cut them into 12 equal pieces.
Tip: Serve the matcha blondies warm with strawberries and a scoop of ice cream.
