Tea in your breakfast

matchawaffles

A cup of tea in the morning is a lovely way to wake up peacefully, or to get to sleep in the evening. Can’t get enough of tea? Then drink it and eat it for breakfast.

Waffles with matcha tea

For this recipe, you need good-quality matcha: ceremonial grade matcha. It’s called that because the tea drunk during Japanese tea ceremonies requires the best matcha available. Your waffles will also turn a beautiful bright green from it. To make the whole thing completely tropical, use diced mango and coconut yogurt or cream.

Jasmine tea scones with raspberries and blackberries

The subtle floral flavor of jasmine goes wonderfully with fresh raspberries and blackberries. You can make them without fruit, but these scones have that little something extra you need in the morning thanks to the jasmine. So go with the fruit. Your scones freeze well, so you can have these for breakfast all week.

A breakfast loaf with Earl Grey tea and dried fruit

Soaking dried fruit in black tea such as Earl Grey gives it a much deeper, more intense flavor. The citrus from the orange zest and the sweet fruit provide balance.

Earl Grey pancakes

If you like Earl Grey lattes, like the author of this recipe, you’ll probably love these pancakes too. After all, in their words, it’s ‘basically the same’: warm milk, vanilla and tea.

French toast with Thai tea

Soaking the pear in the tea and mixing it into the batter as well makes everything taste wonderfully like a holiday in Thailand. Star anise and cloves normally make you think of winter, but not in this recipe.
