Classics such as deviled eggs are always a hit on the Easter table. But what else can you scramble, bake, boil or poach with the main ingredient of every Easter celebration? One rule: everything is permitted in love and eggs.

Stuffed eggs/deviled eggs
A guaranteed hit at Easter brunch, easy to make and très Instagrammable to boot. And all that for a mash of egg yolk piped into half an egg. If you add something spicy to the yolk, such as Tabasco or chili flakes, and then sprinkle paprika over them, they’re called deviled eggs. Click here for the recipe. 

Egg salad
You can finish this classic of diced hard-boiled eggs with mayonnaise, herbs and spices however you like: with salmon roe on top, for example. Or bacon bits, diced avocado, boiled potato, pickle and/or fried halloumi.

Eggs benny
Even if this is probably how all your weekends already begin, you can never get enough of ‘eggs benny’. Two toasted English muffin halves (not cake!) each topped with a slice of smoked bacon or cooked ham, a poached egg and hollandaise sauce. ‘Florentine’ (with blanched spinach instead of meat) is the vegetarian option. Pescatarian? Smoked salmon.

Marbled tea eggs
Hard-boiled eggs that, after the shells have been gently cracked all around, receive a finishing treatment of a few hours by being submerged in tea, optionally with spices such as star anise. The Instagram effect? A marble pattern. This also works with beet juice.

Egg cocktail
There are plenty of cocktails with egg-white foam (such as pisco sour; see the photo and check out our recipe here), but you can also make beautiful alcoholic mixes with the yolk. Such as the Cecil Pick Me Up: cognac, egg yolk, syrup, champagne.

Uitsmijter
There’s nothing wrong with a Dutch classic. Especially not when you give it your own twist: a thick slice of sourdough bread, a thick slice of farmhouse ham and, on top, first a fan of avocado (= your own contribution) before the two fried eggs with whole yolks (sunny side up) complete the tower. Add some bacon bits and your uitsmijter is Instagram-ready.

Frittata
Essentially an Italian leftovers dish, in which the leftovers are held together by the egg. So if you forgot to do your Easter shopping, you can probably still make a frittata.

Pickled eggs
Hard-boiled eggs that are then pickled whole in a large jam jar with vinegar, onion, peppercorns, garlic cloves and, for example, a sliced chili pepper. Adding beet juice creates an especially beautiful effect. After a few days, you’ll have the hit of the Easter table.

Scrambled eggs
The simplest-looking dishes are often the most difficult. Just try making sure those scrambled eggs aren’t as dry as the Sahara, but instead have the right fluffiness, moisture balance and flavor. Good luck. We’ll see the result popping up on Instagram.
