Boutique mayonnaise: how to make it

We know De Frietboutique for its caviar fries and – in collaboration with Ron ‘Gastrobar’ Blaauw – its kale fries. For Valentine’s Day, Sammy and Pebbles from the Amsterdam haute fries shop developed ‘Friet Romantique’ together with chef Raoul Meuwese of De Hoefslag in Bosch en Duin. Fries served with Cabernet Sauvignon mayonnaise and olive crunch.

That olive crunch in particular sounds delicious. Crunch is an indispensable addition to customized mayonnaise. Even if, like us, you’ve been enhancing or culinary-fying your jar of factory-made mayonnaise for years.

1. Sriracha-sesame-nori mayo

You can buy sriracha mayonnaise in a jar. But mixing it yourself and adding the crunch of black sesame seeds and nori flakes (pieces of seaweed sheet), plus an extra kick of red chili flakes, makes the best spicy mayo ever. Stir the flakes in, by the way, but sprinkle the sesame seeds and nori flakes on top.

2. Caper-gin mayo

And not soggy pickled capers straight from a jar, but dry-fried in a frying pan and then finely chopped, for that much-needed crunch. Add freshly ground black pepper and a cautious splash of gin, and you’re done.

3. Egg yolk mayo

Smoke, cure or dry an egg yolk and stir it – finely mashed first or not – into your mayonnaise. It adds tremendous depth of flavor to your sauce.

4. Ginger-curry mayo

Squeeze two balls of candied stem ginger over the mayonnaise using a garlic press. Add a generous amount of curry powder to taste and some of the liquid from the ginger jar. Stir well and let all the flavors meld.

5. Sun-dried tomato mayo

Crush the sun-dried tomatoes into flakes in a coffee grinder, Magimix or another appliance with a grinding function, and stir them into the mayo. Add smoked paprika powder and let the tomato flakes soften in the mayo and release their flavor.
