Amsterdam’s top restaurants join forces for the ultimate frozen pizza

Always delicious: when two wonderful hospitality businesses join forces and develop something new together. Take this tasty initiative… One of our favorite restaurants in Amsterdam Noord, Klaproos, is working with top restaurant Kaagman & Kortekaas. The goal was the ultimate frozen pizza, and the result is something to be proud of.

We all know that restaurants had to get creative during lockdown. We saw it all: drive-thrus, luxury restaurant boxes, lobster croquettes from a vending machine... Klaproos Restaurant has not been sitting still either. Whereas they are used to a packed restaurant every evening, they are now focusing entirely on frozen pizzas. Their three classics, the margherita, cicciolina and lucifera, have also been available in frozen form for several months, and can be bought not only at the restaurant but also at various Stach locations.

“And frozen pizza is quite a different ball game,” says Rogier, chef and co-owner of Klaproos. “Our takeaway has been doing pretty well since lockdown, but the downside is that we only deliver in Amsterdam-Noord. We want to reach the rest of the city again too, and frozen pizzas are the best way to do that. Now everyone in the city can put a Klaproos pizza in their oven or combination microwave whenever they want.”

That was easier said than done. “It turns out that making frozen pizzas properly is quite difficult. It is a different process from making a fresh pizza, with many more steps. And getting a crispy base, melted cheese and perfectly cooked toppings into someone’s home oven is much more difficult than doing it in our wood-fired oven.”

Blood sausage and squid

Rogier managed it nevertheless, and the frozen pizzas are flying off the shelves. Time for the next challenge. Klaproos asked Kaagman & Kortekaas to come up with a frozen pizza. “Giel Kaagman enjoys coming to Klaproos, and we enjoy going there. Besides, we knew he would do something special,” says Rogier.

Terra e Mare

And special it certainly is. Kaagman’s pizza is not your everyday frozen pepperoni pizza. The main ingredients of the new “Terra e Mare” pizza are cuttlefish, homemade blood sausage and sea beet. Exactly—not your standard pizza. It is very tasty and special, though. Rogier: “In the luxury pizza category, this is currently the best one you can buy in Amsterdam. It is also fantastic for us, because it is very different from what we normally do. Kaagman’s luxurious toppings combined with our pizza skills produce a very tasty result.”

This collaboration leaves us wanting more; in the future, we can expect more special Klaproos pizzas made with partner restaurants.

Pizza on a sunny terrace

The “Terra e Mare” frozen pizza will probably be available at Klaproos and at the Kaagman & Kortekaas shop until mid-May (for 14.50 euros). Klaproos’s other frozen pizzas have recently also become available at Stach locations. And for anyone who really wants to taste those delicious pizzas straight from their wood-fired oven: from Friday 30 April, Klaproos’s covered sunny terrace will be open on weekends from 15:00 to 18:00!
