Make this now: this refreshing, creamy pistachio iced latte

By now, we know that pistachios are not only incredibly delicious, but also wonderfully versatile. We’ve already made silky pistachio pesto and our freezer is stocked with homemade pistachio ice cream. Our latest addiction? A super-easy recipe for a refreshing, creamy pistachio iced latte. I’m going to share it with you.

You wouldn’t know it from the weather outside, but it really is June. In other words: summer is knocking on the door. The kettle can cool down after all the overtime it put in for my cups of tea, and from now on I’d rather drink my coffee cold than hot. Iced coffees, then. Delicious! With this pistachio iced latte recipe, I can hardly wait for summer to show itself a little.
How to make pistachio iced latte
Get your blender out of the cupboard, because you’ll need it for this recipe. You’ll also need a handful of (shelled) pistachios and 200 milliliters of milk of your choice. Cow’s milk, oat, soy, almond: it’s up to you. Can’t make it sweet enough? You can optionally add a tablespoon of condensed milk. Oh, and you can also prepare a double shot of espresso. You’ll need ice cubes too, but naturally, you should only take those out of the freezer at the last moment.
Put the pistachios in your blender together with the 200 milliliters of milk. Turn on the blender and blend everything until smooth. Strain the mixture well so no stray pistachio bits remain. Pour it into a glass filled with ice cubes and finally add your double shot of espresso. Want the extra-sweet version with condensed milk? Add it in step 1, when you put the pistachios and milk in the blender. You can optionally finish the pistachio iced latte with a topping of ground pistachios. In that case, blend some extra pistachios after you’ve made the latte.
