Michelin-starred chef Jacob Jan Boerma opens pop-up restaurant in Loosdrecht

Three-Michelin-starred chef Jacob Jan Boerma and star chef Thomas Diepersloot are set to shine in Loosdrecht for three days. The duo is opening a pop-up restaurant there in the run-up to the opening of their new Antwerp restaurant, Fine Fleur. We were allowed to preview it.

From Friday 24 September through Sunday 26 September, Lakehouse Loosdrecht is the place to be. Star chefs Jacob Jan Boerma and Thomas Diepersloot (Restaurant Voltaire*) are opening a pop-up here where, under the theme ‘9 Senses’, you will be taken on a culinary journey through nine courses, with matching wines.

And all this is to offer a preview of the new Fine Fleur in Antwerp. The three-Michelin-starred chef’s restaurant will be located in the newly opening five-star superior hotel: Botanic Sanctuary Antwerp, where four gastronomic restaurants will be run by renowned star chefs. Jacob Jan Boerma and Thomas Diepersloot are among them. Chef Francis Tavarez will also be working in the kitchen at Fine Fleur.
Jacob Jan is delighted with this opportunity and location: ‘I think Antwerp is an absolutely fantastic city. In fact, Antwerp is the culinary capital of the Benelux, as far as I’m concerned. With Le Pristine (by Sergio Herman, ed.) on the same street and another three-Michelin-starred chef, Gert de Mangeleer, in the hotel, it will become Belgium’s longest Michelin-starred street.’
Little fat, lots of acidity
What can you expect? Beautiful plates with fresh dishes characterised by acidity, herbs, spices and vegetables. Light and elegant, because Jacob Jan uses little fat, so after nine courses you won’t feel like you’ve been assaulted, but will still feel (almost) as fit as a fiddle.

Lunch or dinner

A nine-course lunch including amuse-bouches, petits fours, wine and a glass of champagne costs 285 euros; dinner costs 350 euros.
