Mini pancakes are the perfect breakfast! (but not for your six-pack abs)

There are inventions so simple, so clever, that you wonder: why didn’t I think of that? Mini pancakes fall into that category. Those delicious, thick American pancakes, you know? Only tiny, and lots of them. On a little plate. With plenty of maple syrup poured over them. People: brilliant!

The Naughty Fork started the idea on her Instagram account (with the amazing motto: I’ll start my diet tomorrow). A video of a bowl full of teeny-tiny pancakes appeared there. The brains behind this brilliant breakfast, Samantha Schnur from Miami, specializes in these kinds of disgustingly delicious dishes. Her variation tip for the adorable pancake breakfast: stir mini m&m’s into the batter and sprinkle a handful over the top for decoration. Chocolate chips work too, as she shows in the video. A winner!
No rocket science
Other American websites provide a step-by-step description of the mini pancakes. No rocket science: just follow a pancake recipe and pipe teeny blobs of batter into a frying pan using a piping bag. They cook and become thick and fluffy, then go into a bowl. A spin around the internet turns up some lovely variations: with sprinkles, powdered sugar (duh), banana slices, Nutella and even, just like cornflakes, in a bowl with milk. But only the dog likes that, according to the outcome of that experiment. Samantha’s original version was actually pretty simple: a thick knob of butter and a sea of maple syrup, done.
Ping, food!
When I look at those thick little pancakes, poffertjes also come to mind. They don’t have those in America, but with microwave poffertjes we can skip all the steps involving a pan, butter and spatula and get straight to the point: when the microwave goes ping, you have lots of carbohydrates with sugar in a bowl within seconds. Has anyone tried this yet?
