Next-level sandwich shop PAINDEMIE opens permanent location in Amsterdam

Amsterdam’s hospitality scene has gained a new asset: after the great success of the pop-up during lockdown, PAINDEMIE now has a permanent location in Amsterdam Oud-West.


On the menu
The menu includes generous burgers, classic grilled cheese sandwiches with Emmental and golden-brown toast with black pudding and fried onion. The PAINDEMIE Burger is toasted in an antique sandwich iron until it becomes a ‘toastiburger’, inspired by the ‘patty melt’ popular in America. In addition, all the toppings are homemade. Guillaume de Beer: ‘My mother is French and I’ve been going to Brittany every year since I was born. There, they use irons to toast ‘Pain de Mie’ bread over the fire. This works much better than in a pan, because the iron can get incredibly hot. In collaboration with our baker, after a lot of testing we managed to recreate the French toast bread as I remember it from my childhood.’

All burgers are made with Dutch goat meat. Ethical, sustainable, but above all incredibly delicious. Male goats are often a dilemma for dairy farmers because they don’t produce milk and are therefore of little value. The aim is to include male goats in the food system instead of wasting them.
Vegetarians can also feel free to stop by. All burgers can be replaced with homemade smash burgers made from Redefine Meat.
The BIG Mie
The highlight of the menu? The BIG Mie, inspired by the famous Big Mac from McDonald’s. Our Snackspert was wildly enthusiastic: ‘My hormones went into overdrive when I took this Big Mie toast from PAINDEMIE in Amsterdam (run by the heroes behind, among others, @restaurantbreda and @marispiperbrasserie) out of the packaging. What food porn! And it tasted unbelievably good, because it was finally something new for me to try again. This sandwich consists of two (!) goat burgers topped with melted goat cheese, pickle, iceberg lettuce, and a Big Mie sauce (you can make the comparison yourself). Awesome, because goat meat is genuinely delicious. Tender and slightly creamy, a little sweet. Wonderful. You should try it yourself, but perhaps you’ll already be convinced by the number of stars I’m giving it: ⭐️⭐️⭐️⭐️⭐️’
Art deco bar with sake and cocktails
The building on Kinkerstraat, which opens its doors on 23 March, consists of two floors. The interior downstairs is inspired by a Japanese metro station, and this is where you can eat the tastiest burgers, sandwiches and grilled cheese sandwiches. Upstairs, you can enjoy juicy natural wines and listen to great vinyl records in the art deco bar. You’ll also find a fine selection of pure sake & cocktails here. The upstairs menu also includes a number of more luxurious items. For example, you can order the escargot grilled cheese or a small fillet of goat tenderloin with gravy and, of course, Pain de Mie.
After the pandemic, every day is of course a reason to celebrate, and if you’re really lucky, you’ll find Guillaume twerking behind the turntables. By arrangement, you can also bring your own vinyl records.
